It’s the holiday season, the best time of year for getting creative in the kitchen. And with pumpkin in its various manifestations being plentiful in the supermarket, the season lends itself to making gourd inspired treats. I searched through my pantry and along with pumpkin puree (left over from when I made my Pumpkin Souffle) I also found quinoa, oatmeal and shredded coconut. Instantly I thought: COOKIES!
You should know that I don’t like artificial sweeteners; I figure that my body is made to metabolize natural occuring chemicals rather than man-made ones. So even though the brown sugar in this recipe may add some calories, it also adds a great chew to this gluten-free cookie.

Ingredients
- 1/2 C Dry Quinoa
- 1 C Oats
- 1/2 C Brown Sugar, firmly packed
- 1 Egg, Whole
- 1 Egg White
- 1/8 Tsp Salt
- 1/2 C Pumpkin Puree
- 1/2 C Shredded Sweetened Coconut
- 1/2 tsp Vanilla
- Semi Sweet Chocolate Chips (optional)
Instructions
- Using a hand mixer, mix brown sugar, vanilla and eggs at high speed until creamy.
- Add Pumpkin puree and mix until well blended.
- Grind quinoa until it is the consistency of flour.
- Toss oats, quinoa and salt into a large bowl.
- Add liquid ingredients into dry ingredients and fold until it’s all an even consistency. Mixture will be lumpy.
- Spoon cookie mixture onto a greased cookie sheet, about 1 Tablespoon is enough for 1 cookie.
- Bake at 350 degrees for 15 minutes.
- Remove cookies from oven and set aside to cool.
- In a microwave safe bowl (or double boiler) melt chocolate chips.
- Dip cookies into melted chocolate and refrigerate until hardened.
